Blue Mini Pavlovas

Light, Crisp, and Perfect for Any Occasion

These blue mini pavlovas are as beautiful as they are delicious. With crisp meringue shells that give way to a soft, marshmallow-like center, they’re topped with lightly sweetened vanilla cream for a dessert that’s both elegant and playful. The blue color adds a fun, modern twist that’s perfect for parties, baby showers, or anytime you want to impress with minimal ingredients.



Ingredients

Meringue

  • 1 1/4 cups granulated sugar

  • 5 egg whites (room temperature)

  • 2 teaspoons cornstarch

  • 1/2 teaspoon cream of tartar

  • 2 teaspoons white wine vinegar

  • 2 teaspoons blue food coloring (gel preferred for more vibrant color)

Whipped Cream Topping

  • 1 cup heavy cream

  • 3 tablespoons granulated sugar

  • 1 teaspoon vanilla extract


Instructions

Step 1:

Preheat the oven to 350 degree Fahrenheit. Line a baking sheet with parchment paper.


Step 2:

In a clean, dry bowl, begin beating the egg whites on medium speed until foamy.


Step 3:

Add the cream of tartar and continue to beat until soft peaks form.


Step 4:

Gradually add the sugar, one tablespoon at a time, while continuing to beat. Once all the sugar is added, increase the speed to high and beat until stiff, glossy peaks form.


Step 5:

Gently fold in the cornstarch, vinegar, and blue food coloring until fully combined. Be careful not to deflate the mixture.


Step 6:

Spoon or pipe the meringue into small nests on the prepared baking sheet, about 3 to 4 inches wide, leaving a small well in the center of each.


Step 7:

Place the prepared baking sheet in the oven and immediately reduce the temperature to 200°F. Bake for 60–75 minutes, or until the pavlovas are dry to the touch and lift easily from the parchment without sticking. Once baked, turn off the oven and allow the pavlovas to cool completely inside.


Make the Cream

Step 8:

In a chilled bowl, beat the heavy cream, sugar, and vanilla extract together until soft peaks form.


Assemble

Step 9:

Once the pavlovas are completely cool, top each one with a dollop of whipped cream just before serving. Add fresh berries or fruit if desired.
