Ingredients


Simple Syrup


• 1 cup water

• ½ cup sugar

• 2 sprigs fresh thyme

• 1 to 2 teaspoons maple syrup


Popsicle Base


• ⅔ cup grapefruit juice, fresh if possible

• 1 ½ to 2 cups water

• 1 to 2 tablespoons coconut pulp

• 1 tablespoon sugar

Directions


Step 1 – Make the Simple Syrup

In a small saucepan, combine the water and sugar. Add the thyme and bring the mixture to a gentle simmer over medium heat. Stir until the sugar dissolves. Remove from the heat, stir in the maple syrup, and let the thyme steep for 10 to 15 minutes. Strain out the thyme and set the syrup aside to cool.


Step 2 – Mix the Base

In a blender or mixing bowl, combine the grapefruit juice, water, coconut pulp, sugar, and cooled thyme syrup. Taste and adjust the sweetness if needed. The mixture should taste slightly sweeter than you expect, since freezing will dull the flavors.


Step 3 – Freeze

Pour the mixture into popsicle molds, leaving a little room at the top for expansion. Insert the sticks and place in the freezer for 4 to 6 hours, or until completely frozen.


Step 4 – Serve

Run the molds briefly under warm water to release the popsicles. Serve right away and enjoy the refreshing citrus and herbal flavors.

3. Pour into popsicle molds, insert sticks, and freeze 4–6 hours until solid.

4. Run molds under warm water to release. Serve immediately.
