These Mexican style dumplings combine a soft, tangy Greek yogurt dough with a savory ground beef and roasted poblano filling. Finished with a drizzle of chili oil and red pepper flakes, they’re a bold and delicious meal perfect for dinner or meal prep.

Ingredients
Dough
2 cups all-purpose flour
1 1/2 cups Greek yogurt
Filling
Ground beef (amount based on preference)
1 roasted poblano pepper, chopped
1 tablespoon taco seasoning
1 teaspoon salt
2/3 cup pico de gallo
1 tablespoon ginger garlic paste
Topping
Chili oil or chili olive oil
Red pepper flakes
Instructions
Step 1:
In a large bowl, mix the flour and Greek yogurt until a soft dough forms. Knead gently on a floured surface until smooth. Cover and set aside.
Step 2:
In a skillet over medium heat, cook the ground beef until browned.
Step 3:
Add roasted poblano, taco seasoning, salt, pico de gallo, and ginger garlic paste to the beef. Cook for a few more minutes until everything is well combined and heated through. Remove from heat and let cool slightly.
Step 4:
Divide the dough into small portions and roll out each piece into a thin circle.
Step 5:
Place a spoonful of filling in the center of each dough circle. Fold and seal the edges to form dumplings.
Step 6:
Steam or pan-fry the dumplings until cooked through and golden brown, depending on your preference.
Step 7:
Drizzle with chili oil and sprinkle red pepper flakes over the dumplings before serving.
