A Bold, Flavor-Packed Meal in Minutes

If you're looking to switch up your chicken routine with something full of flavor but still easy
to prepare, Cowboy Butter Chicken Skewers might just be the answer. These skewers combine juicy, oven-baked chicken and sweet red pepper with a rich and zesty cowboy butter sauce that brings it all together.
The best part? You can have this on the table in about 30 minutes with just a few ingredients and minimal prep.
Let’s walk through the steps.
Step-by-Step: Cowboy Butter Chicken Skewers
Step 1: Make the Cowboy Butter

Start by mixing up the cowboy butter. It’s a simple compound butter that packs a punch of flavor and pulls this dish together.
In a bowl, combine:
½ cup butter (melted or very soft)
2 teaspoons Dijon mustard
1 to 2 teaspoons lemon juice
1½ tablespoons chopped parsley or cilantro
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon paprika
½ teaspoon garlic powder or minced garlic

Stir everything together until smooth. Set it aside. You can let it sit at room temperature while you prepare the chicken so the flavors have time to develop. However, don’t leave it out too long or the butter may start to harden. If that happens, just pop it in the microwave for 10 to 20 seconds to soften it again.
Step 2: Prepare the Chicken and Red Pepper
You will need:
1 pound of boneless chicken (breast or thighs), cut into bite-sized pieces
Half of a red bell pepper, chopped into 1-inch chunks
Olive oil
Salt and pepper
Toss the chicken and red pepper with a drizzle of olive oil and season with salt and pepper.
This helps with even roasting and gives the meat a simple base flavor before the cowboy butter is added.

Step 3: Assemble the Skewers
Thread the seasoned chicken and red pepper pieces onto skewers, alternating between them. If you're using wooden skewers, soak them in water for 20 minutes beforehand to prevent burning in the oven.
Step 4: Bake
Preheat your oven to 425°F (220°C). Place the skewers on a baking sheet lined with parchment paper or foil for easy cleanup.
Bake for 20 minutes, turning once halfway through. The chicken should be fully cooked, and the red peppers should be slightly tender with a bit of char starting to show.

Step 5: Finish with Cowboy Butter
Right after the skewers come out of the oven, brush them generously with the cowboy butter while everything is still hot. This allows the butter to melt into the chicken and peppers, coating each bite with bold, herby flavor.
Serve immediately, and spoon extra cowboy butter over the top or offer it on the side.
